Easy Loaded Baked Potato Casserole

Hey, y’all!  Today, I am sharing one of my favorite little side recipes.  In fact, we served it just this weekend!  I love to make it as a side for BBQ, steaks, or burgers plus you can prep this side beforehand, refrigerate, and bake before serving!  Perfect!


  • 3 pkgs Instant mashed potatoes
  • 1 pkg Ranch Dressing mix
  • 1 16 oz container of Sour Cream
  • 2 cups cheddar cheese
  • 1 pkg of bacon


Preheat oven to 350 degrees.  Prepare bacon and mashed potatoes as instructed on packages. Crumble bacon and set aside. Mix mashed potatoes, ranch dressing mix, sour cream, 2 cups of cheddar cheese, and crumbled bacon.  Spoon into greased, 13×9 baking pan.   Bake for 20-25 minutes or until heated through. 🙂  Enjoy!

  1. I “make” a similar recipe every year for Thanksgiving, and it’s soooooooo yummy! People always RAVE about it, but when they ask for the recipe, I’m always a little shy. Ha! 🙂


  2. If I make the night before, including baking, and take to work the next morning for potluck? Or do you suggest I bake it the morning of?
