Baked Potato Casserole


Hey, hey friends!   I just love the Holidays, but you know what I don’t love?  Recipes that are stressful this time of the year.  I’d rather be spending time with my family, so when someone passed this recipe on to me a few years ago…I knew it would be a winner. I posted this recipe last year, and it quickly became of favorite of y’alls as well!  Something great like that is worth resharing, so here we go!

I love to make it as a side for Christmas dinner, BBQ, steaks, or burgers.  Plus you can prep this side beforehand, refrigerate, and bake before serving!  Perfect!


  • 3 pkgs Instant mashed potatoes
  • 1 pkg Ranch Dressing mix
  • 1 16 oz container of Sour Cream
  • 4 cups cheddar cheese
  • 1 pkg of bacon


Preheat oven to 350 degrees.  Prepare bacon and mashed potatoes as instructed on packages. Crumble bacon and set aside. Mix mashed potatoes, ranch dressing mix, sour cream, 2 cups of cheddar cheese, and crumbled bacon.  Spoon into greased, 13×9 baking pan.  Sprinkle 2 cups of cheddar cheese on top for extra cheesy goodness.  Bake for 20-25 minutes or until heated through. 🙂  Enjoy!

  1. Sound delish! Any idea how many cups of mashed potatoes the recipe would take in place of instant? I would love to make this one for Thanksgiving….mmmm!
