Easy Beef Stew

Happy Wednesday, my friends! I hope you are having a great week. 🙂

Today, I am sharing a super easy, but still delicious stew recipe.  It’s perfect for a cold day and provides the best kind of leftovers!  I snapped a picture of my bowl of leftovers earlier this week.



  • 2 pounds stew meat
  • 3 tablespoons vegetable oil
  • 4 cups water
  • 4 tbsp of Better than Bouillon Beef Base
  • 2 packets of Beefy Onion Dry Lipton soup mix
  • 1 tsp garlic
  • 1/2 tsp pepper
  • 1 bag, small yellow potatoes cut into halves
  • I bag of baby carrots
  • 2 teaspoons cornstarch 
  • 2 teaspoons cold water


  • Step 1

    In a large pot or dutch oven, cook beef in oil over medium heat until brown. Add water, beef base, garlic, pepper, and soup mix into pot. Stir, bring to a boil, then reduce heat, cover and simmer 1 hour.

  • Step 2

    Stir potatoes, carrots into pot.  Dissolve cornstarch in 2 teaspoons cold water and stir into stew. Cover and simmer 1 hour more.
