Today, I am sharing a super easy, but still delicious stew recipe. It’s perfect for a cold day and provides the best kind of leftovers! I snapped a picture of my bowl of leftovers earlier this week.
- 2 pounds stew meat
- 3 tablespoons vegetable oil
- 4 cups water
- 4 tbsp of Better than Bouillon Beef Base
- 2 packets of Beefy Onion Dry Lipton soup mix
- 1 tsp garlic
- 1/2 tsp pepper
- 1 bag, small yellow potatoes cut into halves
- I bag of baby carrots
- 2 teaspoons cornstarch
- 2 teaspoons cold water
- Step 1
In a large pot or dutch oven, cook beef in oil over medium heat until brown. Add water, beef base, garlic, pepper, and soup mix into pot. Stir, bring to a boil, then reduce heat, cover and simmer 1 hour.
- Step 2
Stir potatoes, carrots into pot. Dissolve cornstarch in 2 teaspoons cold water and stir into stew. Cover and simmer 1 hour more.
