We had a great weekend together, and I am super thankful for that!
We went to the McKinney parade, grilled, swam, and then ended the day with sparklers and a movie!
Today, I am sharing one of my favorite recipes for your next BBQ. I’ve been making this for many years, and it never disappoints!
Baked Potato Casserole
Ingredients
3 pkgs Instant mashed potatoes (family size)
1 pkg dry ranch dressing mix
1 16 oz container of sour cream
2 cups shredded cheddar cheese
1 pkg of bacon, cooked and crumbled
Directions
- Preheat oven to 350 degrees.
- Grease a 9×13 baking dish. Set aside.
- Prepare bacon and mashed potatoes as instructed on packages. Crumble bacon and set aside. Mix mashed potatoes, ranch dressing mix, sour cream, 2 cups of cheddar cheese, and crumbled bacon together in a mixing bowl. Spoon into prepared pan. Bake for 20-25 minutes or until heated through.
I often make this night before we have company, cover, and then bake and serve the day of. It turns out great every time!
